This traditional method sparkling wine spent 2 years ageing in the bottle, and is made from high quality, hand-picked, bunch sorted Pinot Noir and Chardonnay grapes. The wine shows elegant aromatics of apple and white peach, buttered toast and hazelnut, with a fine mousse and vibrant acidity.
This red blend offers the fruity plushness of Merlot married to the savoury character and structured tannic backbone of Cabernet Franc. Aged in French oak for 10 months, raspberry, plum and blackcurrant aromas are underpinned by vanilla bean, cocoa and barrel spice. Deeper tones of tobacco and smoke show up on the palate.
The 2016 Tom Thomson White Canoe is a unique vintage blend of six noble grape varieties. A core of Chardonnay and Sauvignon Blanc, both fermented in French oak barrels form the foundation of this dry white, while smaller volumes of Pinot Gris, Riesling, Gewurztraminer and Viognier, each fermented separately in stainless steel tanks and matured for 6 months in cellar before blending, build on top of this to form a harmonious whole that is round and structured but also has aromatic lift, fruit intensity and a delicate floral character.
This wine appears ruby-garnet, great aromatic depth that shows sour cherry, raspberry and beetroot, with smoke, vanilla, leather and spice following. The mid-palate shows firm tannin and weight, savoury and spicy notes, and a dry, warm finish.
This wine spent 16 months in a combination of Canadian and French oak barriques, and shows classic Pinot characteristics of red fruits, beet root, spice, earth, potpourri and game, overlaid by vanilla bean, smoke and cedar from the barrel treatment. It is a ripe, complex, food friendly wine.
A deep ruby-amber in appearance. Complex nose of dried strawberries and currants, black forest cake (red fruit and cocoa), espresso and dried bay leaf and sage. The flavours carry through on the palate which is weighty, honey, with a long unctuous finish.
This sweet wine was fermented in 3rd fill French oak barrels to add complexity and structure to its naturally concentrated fruit flavours. Appearing light golden-yellow in colour, the nose offers intense aromatics of marmalade, honey, poached pear and apricot compote, with a hint of ginger and baking spice lingering in the background. The palate is luscious and full, with a balanced acidity and a long finish.
The 2015 vintage of our Trek Vineyard Pinot Noir displays a light freshness and elegance evident in cool climate expressions of the grape. The nose shows sour cherry, red currant, lilac, and a woodsy earthiness. The palate delivers light tannins and bright acidity, with savoury dried herb and gentle oak notes overlaying the fruit.
With fruit sourced directly from our own Estate Teaching Vineyard, this barrel fermented Chardonnay spent 13 months in French oak with occasional lees stirring. The nose speaks to the warm vintage with abundant stone fruit, pineapple and pear aromas on the nose, and a rich, full body that balances oak and fruit components, with an underlying mineral character.
45% Cabernet Franc, 37% Merlot, 18% Cabernet Sauvignon. Deep ruby- purple in colour, this ripe, robust red from the hot 2012 growing season shows black cherry, cassis and stewed plum fruit character, underlined by dark chocolate, vanilla bean, nutmeg and a hint of licorice on the nose. This full-bodied palate offers firm, age-worthy tannins and a long, warm, dry finish.
